Ingredients:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 oz cheddar cheese, cut into small cubes
- 10–12 slices bacon
- 1/2 cup barbecue sauce (plus extra for brushing)
- Fresh parsley for garnish (optional)
Directions:
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
- Divide the meat mixture into 10–12 portions. Flatten each one and place a cube of cheddar in the center. Wrap the meat around the cheese and form into a ball.
- Wrap each meatball with a slice of bacon, securing the ends underneath or with a toothpick if needed.
- Place on the wire rack. Brush each bomb generously with barbecue sauce.
- Bake for 25–30 minutes, brushing with more BBQ sauce halfway through, until bacon is crispy and meat is cooked through.
- Let rest 5 minutes before serving. Garnish with chopped parsley if desired.
