Ingredients:
- 1 lb ground beef
- ½ cup breadcrumbs
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 cheddar cheese cubes (¾-inch)
- 8 slices bacon
- ½ cup BBQ sauce (your favorite brand)
- Optional: chopped parsley for garnish
Directions:
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a rack on top.
- In a mixing bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, paprika, salt, and pepper. Mix until just combined.
- Divide the beef mixture into 8 equal portions. Flatten each into a patty and place a cube of cheddar in the center.
- Wrap the beef mixture around the cheese to seal and form a ball.
- Wrap each meatball with a slice of bacon, tucking ends underneath or securing with a toothpick.
- Place bacon bombs on the rack and bake for 25 minutes.
- Brush generously with BBQ sauce and bake for another 5–10 minutes, until bacon is crispy and caramelized.
- Rest for 5 minutes before serving. Garnish with parsley if desired.
