Ingredients:

  • 1 lb ground beef
  • 1/2 small onion, diced
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • Salt and pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped pickles (optional)
  • 1 tablespoon butter or oil, for cooking
  • Optional for serving: ketchup, mustard, or burger sauce for dipping

Directions:

  1. In a skillet over medium heat, cook ground beef and diced onion until the beef is browned and onions are soft. Drain excess grease.
  2. Stir in ketchup, mustard, salt, and pepper. Cook for 2 more minutes. Remove from heat.
  3. Lay out tortillas and sprinkle cheddar cheese on one half of each tortilla.
  4. Add a layer of the beef mixture over the cheese and sprinkle with chopped pickles (if using). Top with more cheese.
  5. Fold the tortillas in half to enclose the filling.
  6. Heat butter or oil in a large skillet over medium heat.
  7. Cook quesadillas one or two at a time for 2–3 minutes per side, or until golden brown and the cheese is melted.
  8. Slice into wedges and serve with dipping sauces of choice.
