Ingredients:
- 1 lb ground beef
- 1/2 small onion, diced
- 1 tablespoon ketchup
- 1 tablespoon yellow mustard
- Salt and pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped pickles (optional)
- 1 tablespoon butter or oil, for cooking
- Optional for serving: ketchup, mustard, or burger sauce for dipping
Directions:
- In a skillet over medium heat, cook ground beef and diced onion until the beef is browned and onions are soft. Drain excess grease.
- Stir in ketchup, mustard, salt, and pepper. Cook for 2 more minutes. Remove from heat.
- Lay out tortillas and sprinkle cheddar cheese on one half of each tortilla.
- Add a layer of the beef mixture over the cheese and sprinkle with chopped pickles (if using). Top with more cheese.
- Fold the tortillas in half to enclose the filling.
- Heat butter or oil in a large skillet over medium heat.
- Cook quesadillas one or two at a time for 2–3 minutes per side, or until golden brown and the cheese is melted.
- Slice into wedges and serve with dipping sauces of choice.
