- Cheesy Beefy Roll-Ups
Ingredients:
- 1 lb ground beef
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon taco seasoning
- 1/2 cup salsa
- 1 1/2 cups shredded cheddar cheese
- 6 large flour tortillas
- 2 tablespoons butter, melted
- 1 tablespoon fresh cilantro, chopped (for garnish)
Directions:
- In a large skillet, cook the ground beef over medium heat until fully browned, breaking it into crumbles. Drain any excess fat.
- Add the chopped onion and garlic, cooking for 3-4 minutes until softened. Stir in the taco seasoning and salsa, letting the mixture simmer for 2-3 minutes.
- Remove from heat and stir in 1 cup of shredded cheddar cheese until it’s melted and evenly distributed.
- Lay out the flour tortillas and evenly divide the beef mixture onto each one. Roll up each tortilla tightly, tucking in the sides as you go.
- Preheat a skillet or grill pan over medium heat. Brush the roll-ups with melted butter and grill them for 2-3 minutes on each side until crispy and golden brown.
- Remove from the skillet, garnish with fresh cilantro, and serve immediately with your favorite dipping sauce.
