Ingredients:

  • 1 lb ground beef
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon taco seasoning
  • 1/2 cup salsa
  • 1 1/2 cups shredded cheddar cheese
  • 6 large flour tortillas
  • 2 tablespoons butter, melted
  • 1 tablespoon fresh cilantro, chopped (for garnish)

Directions:

  1. In a large skillet, cook the ground beef over medium heat until fully browned, breaking it into crumbles. Drain any excess fat.
  2. Add the chopped onion and garlic, cooking for 3-4 minutes until softened. Stir in the taco seasoning and salsa, letting the mixture simmer for 2-3 minutes.
  3. Remove from heat and stir in 1 cup of shredded cheddar cheese until it’s melted and evenly distributed.
  4. Lay out the flour tortillas and evenly divide the beef mixture onto each one. Roll up each tortilla tightly, tucking in the sides as you go.
  5. Preheat a skillet or grill pan over medium heat. Brush the roll-ups with melted butter and grill them for 2-3 minutes on each side until crispy and golden brown.
  6. Remove from the skillet, garnish with fresh cilantro, and serve immediately with your favorite dipping sauce.
