Ingredients:
- 1 lb ground beef
- 2 cups frozen diced potatoes (or cooked and cubed)

- 1 small onion, chopped

- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 6 large flour tortillas

Directions:
- In a large skillet, heat olive oil over medium heat. Add diced potatoes and sauté until golden and tender, about 10 minutes. Remove and set aside.
