Cheesy Rotel Dogs are a fun and flavorful twist on the classic hot dog. The combination of creamy, melted cheddar and cream cheese with the spicy RoTel tomatoes creates a deliciously cheesy topping that pairs perfectly with a hot, grilled sausage. The green chilies in the RoTel add just the right amount of heat, while the rich cheese sauce makes each bite extra indulgent.

Ingredients:

  • 4 hot dog buns
  • 4 beef hot dogs
  • 1 can (10 oz) Ro*Tel diced tomatoes and green chilies, drained
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese, softened
  • 2 tablespoons milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon chopped green onions (optional)
  • Salt and pepper to taste

Directions:

  1. Preheat the grill or stovetop pan to medium heat. Grill the hot dogs until heated through and lightly browned on all sides, about 5-7 minutes.
  2. While the hot dogs cook, prepare the cheesy Rotel topping. In a medium saucepan, combine the Ro*Tel, cheddar cheese, cream cheese, milk, garlic powder, and onion powder. Cook over medium heat, stirring frequently, until the cheese has melted and the mixture is smooth.
  3. Season the cheesy sauce with salt and pepper to taste.
  4. Once the hot dogs are done, place each hot dog in a bun.
  5. Spoon the cheesy Rotel mixture generously over each hot dog. Top with chopped green onions if desired.
  6. Serve immediately and enjoy!
