This Chicken Cordon Bleu Meatloaf is a delicious twist on the classic chicken cordon bleu. It features juicy ground chicken, wrapped in layers of savory ham and melted Swiss and mozzarella cheeses. The Dijon mustard glaze adds a tangy finish, perfectly complementing the richness of the cheese and the tenderness of the meatloaf.

Ingredients:

  • 1 lb ground chicken
  • 1/2 lb deli ham, thinly sliced
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Swiss cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil

Directions:

  1. Preheat the oven to 375°F (190°C) and grease a loaf pan with cooking spray or olive oil.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, milk, egg, garlic powder, dried thyme, salt, and pepper. Mix until fully combined.
  3. Lay out the sliced deli ham on a flat surface, slightly overlapping each slice.
  4. Spread the chicken mixture evenly over the ham, pressing it down gently to form a layer.
  5. Sprinkle the Swiss cheese and mozzarella cheese evenly over the chicken mixture.
  6. Carefully roll up the ham around the chicken and cheese, making sure it is tightly wrapped to create a log shape.
  7. Place the rolled-up chicken cordon bleu meatloaf into the greased loaf pan.
  8. Brush the top of the meatloaf with Dijon mustard and drizzle with olive oil.
  9. Bake for 40-45 minutes, or until the meatloaf is fully cooked through (internal temperature should reach 165°F).
  10. Allow the meatloaf to rest for 5-10 minutes before slicing. Serve warm.
