This Chicken Cordon Bleu Meatloaf is a delicious twist on the classic chicken cordon bleu. It features juicy ground chicken, wrapped in layers of savory ham and melted Swiss and mozzarella cheeses. Ingredients:
- 1 lb ground chicken
- 1/2 lb deli ham, thinly sliced
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Swiss cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
Directions:
- Preheat the oven to 375°F (190°C) and grease a loaf pan with cooking spray or olive oil.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, milk, egg, garlic powder, dried thyme, salt, and pepper. Mix until fully combined.
- Lay out the sliced deli ham on a flat surface, slightly overlapping each slice.
- Spread the chicken mixture evenly over the ham, pressing it down gently to form a layer.
- Sprinkle the Swiss cheese and mozzarella cheese evenly over the chicken mixture.
- Carefully roll up the ham around the chicken and cheese, making sure it is tightly wrapped to create a log shape.
