Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Directions:

Heat olive oil in a large skillet over medium heat.

Season chicken breasts with salt and pepper, then add to skillet. Cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.

In the same skillet, add minced garlic and sauté until fragrant.

Stir in rice, chicken broth, oregano, and basil. Bring to a boil.

Reduce heat to low and return chicken to the skillet. Cover and simmer for 20-25 minutes, or until rice is cooked.

Stir in Parmesan cheese and season with salt and pepper to taste.
