- Chocolate Chip Cookie Dough Ice Cream Cake
Ingredients:
For the Cookie Dough Layer:
- 1 cup all-purpose flour (heat-treated)
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- 1/2 cup mini chocolate chips
For the Ice Cream Layer:
- 1.5 quarts vanilla ice cream, softened
- 1.5 quarts chocolate ice cream, softened
For the Crust:
- 20 chocolate sandwich cookies (like Oreos), crushed
- 1/4 cup melted butter
For the Topping:
- 1 cup whipped cream
- 1/4 cup chocolate syrup
- Extra mini chocolate chips for garnish
Directions:
- In a medium bowl, combine crushed chocolate sandwich cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Freeze for 15 minutes.
- In another bowl, cream together the butter, brown sugar, granulated sugar, and vanilla until smooth. Add milk and heat-treated flour, then stir in the mini chocolate chips. Set aside.
- Spread the softened chocolate ice cream evenly over the chilled cookie crust. Freeze for 30 minutes.
- Spread the cookie dough mixture on top of the chocolate ice cream layer. Freeze for another 30 minutes.
- Spread the softened vanilla ice cream over the cookie dough layer. Freeze the entire cake for at least 4 hours or overnight.
- Before serving, top the cake with whipped cream, drizzle with chocolate syrup, and sprinkle with extra mini chocolate chips.
- Slice and enjoy your decadent ice cream cake!
