  • 8 to 8 1/2 ounces of chocolate almond bark (for melting)
  • 1/2 cup + 1 tablespoon heavy whipping cream

Directions:

  1. Preparation: Preheat your oven to 350°F (175°C). Gather all ingredients and ensure your work area is clean.
  2. Cook the Sugars: In a clean, dry saucepan, combine the white sugar, corn syrup, and brown sugar. Stir them together over medium heat until fully combined.
  3. Monitor Temperature: Using a candy thermometer, wait for the mixture to reach 250°F (121°C).
  4. Add Pecans and Flavor: Once the desired temperature is reached, whisk in the finely chopped pecans and vanilla extract until thoroughly incorporated.
  5. Incorporate Cream and Butter: Gently whisk in the heavy whipping cream and butter. Stir continuously while monitoring the temperature, aiming to reach 238°F (114°C).
  6. Form the Turtles: Upon hitting 238°F, remove the saucepan from the heat. Drop two-teaspoon portions of the mixture onto a greased baking sheet or silicone baking mat using a teaspoon.
  7. Melt the Chocolate: Break the chocolate almond bark into pieces and melt in a microwave-safe bowl. Microwave in intervals, stirring until smooth.
  8. Coat the Turtles: Dip the cooled caramel pieces into the melted almond bark, ensuring each piece is generously coated. Let the excess chocolate drip off and place each piece on a cooling rack.
