Ingredients:
- 1/4 cup white sugar
- 1/2 cup corn syrup
- 1/4 cup brown sugar
- 1 1/2 cups pecans, finely chopped

- 3/4 teaspoon vanilla extract
- 8 to 8 1/2 ounces of chocolate almond bark (for melting)
- 1/2 cup + 1 tablespoon heavy whipping cream
Directions:
- Preparation: Preheat your oven to 350°F (175°C). Gather all ingredients and ensure your work area is clean.
- Cook the Sugars: In a clean, dry saucepan, combine the white sugar, corn syrup, and brown sugar. Stir them together over medium heat until fully combined.
- Monitor Temperature: Using a candy thermometer, wait for the mixture to reach 250°F (121°C).
- Add Pecans and Flavor: Once the desired temperature is reached, whisk in the finely chopped pecans and vanilla extract until thoroughly incorporated.
- Incorporate Cream and Butter: Gently whisk in the heavy whipping cream and butter. Stir continuously while monitoring the temperature, aiming to reach 238°F (114°C).
- Form the Turtles: Upon hitting 238°F, remove the saucepan from the heat. Drop two-teaspoon portions of the mixture onto a greased baking sheet or silicone baking mat using a teaspoon.
- Melt the Chocolate: Break the chocolate almond bark into pieces and melt in a microwave-safe bowl. Microwave in intervals, stirring until smooth.
- Coat the Turtles: Dip the cooled caramel pieces into the melted almond bark, ensuring each piece is generously coated. Let the excess chocolate drip off and place each piece on a cooling rack.
- Set the Chocolate: Allow the chocolate-coated caramel turtles to sit for about 15 minutes until the chocolate sets.
