Chocolate Pecan Turtle Clusters are the ultimate sweet treat, offering a perfect combination of crunchy, nutty pecans, smooth caramel, and rich chocolate. With each bite, the buttery caramel and crunchy pecans perfectly complement the silky chocolate, making it an irresistible dessert.

  1. Ingredients:

For the Turtle Clusters:

  • 1 1/2 cups pecan halves
  • 1 cup caramel candies (or 1/2 cup homemade caramel sauce)
  • 8 oz semisweet chocolate (or milk chocolate)
  • 1 teaspoon vanilla extract (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Spread the pecan halves evenly on the baking sheet and toast them in the preheated oven for 8-10 minutes, stirring halfway through, until golden and fragrant. Remove from the oven and set aside to cool.
  3. While the pecans are cooling, melt the caramel candies. If using store-bought caramel candies, place them in a heatproof bowl and microwave in 20-second intervals, stirring between each, until smooth and fully melted. If using homemade caramel sauce, ensure it’s smooth and pourable.
  4. Melt the chocolate in a separate heatproof bowl using a microwave or a double boiler. Stir in vanilla extract if desired for extra flavor.
  5. To assemble the turtle clusters, place a heaping spoonful of toasted pecans on the prepared baking sheet, grouping them in small clusters.
  6. Spoon a dollop of melted caramel over each cluster of pecans, then drizzle the melted chocolate on top of the caramel, covering the pecans and caramel completely.
  7. Allow the turtle clusters to set at room temperature for about 30 minutes, or place them in the fridge for quicker setting (about 15 minutes).
