Ingredients:
- 1 cup butter (2 sticks)
- 2 cups sugar
- 4 eggs
- 3 cups flour, self-rising
- 1 cup buttermilk
- 2 teaspoons vanilla
- For the Southern Caramel Frosting:
- 2 cups sugar
- 1 cup buttermilk
- ½ cup Crisco
- ½ cup butter
- 1 teaspoon baking soda
- Preheat oven to 350 degrees.
- Grease three 9-inch cake pans and line with parchment paper.
- Beat butter until light and fluffy, then add sugar and continue to beat for 5 minutes.
- Add eggs one at a time, mixing well after each.
- Alternately add flour and buttermilk, starting and ending with flour. Mix well after each addition.
- Add vanilla and mix thoroughly.
- Divide batter evenly among pans and bake for 25-30 minutes until set.
- Remove cakes from pans and cool on racks.
- For the frosting, mix all ingredients in a 3-4 quart cast iron dutch oven.
- Cook to softball stage (235º – 245º) using a candy thermometer or the cold water test.
- Remove from heat and beat until creamy and spreadable.
- Frost the cooled cake layers.
