Ingredients:

  • 1 cup butter (2 sticks)
  • 2 cups sugar
  • 4 eggs
  • 3 cups flour, self-rising
  • 1 cup buttermilk
  • 2 teaspoons vanilla
  • For the Southern Caramel Frosting:
    • 2 cups sugar
    • 1 cup buttermilk
    • ½ cup Crisco
    • ½ cup butter
    • 1 teaspoon baking soda
Directions:
  1. Preheat oven to 350 degrees.
  2. Grease three 9-inch cake pans and line with parchment paper.
  3. Beat butter until light and fluffy, then add sugar and continue to beat for 5 minutes.
  4. Add eggs one at a time, mixing well after each.
  5. Alternately add flour and buttermilk, starting and ending with flour. Mix well after each addition.
  6. Add vanilla and mix thoroughly.
  7. Divide batter evenly among pans and bake for 25-30 minutes until set.
  8. Remove cakes from pans and cool on racks.
  9. For the frosting, mix all ingredients in a 3-4 quart cast iron dutch oven.
  10. Cook to softball stage (235º – 245º) using a candy thermometer or the cold water test.
  11. Remove from heat and beat until creamy and spreadable.
  12. Frost the cooled cake layers.
