Ingredients:
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, heat-treated
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips
  • 14 oz sweetened condensed milk
  • 1/2 cup creamy peanut butter (optional)
  • Additional mini chocolate chips for topping
Directions:
  1. Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, cream together the butter and brown sugar until smooth. Mix in the vanilla extract.
  3. Gradually add the flour and salt to the butter mixture, mixing until fully incorporated. Fold in 1 cup of mini chocolate chips.
  4. Press half of the cookie dough mixture into the bottom of the prepared pan.
  5. In a microwave-safe bowl, combine the sweetened condensed milk and peanut butter (if using). Microwave for 30 seconds, stir, and repeat until smooth.
  6. Pour the condensed milk mixture over the cookie dough layer in the pan, spreading evenly.
  7. Crumble the remaining cookie dough over the top, and gently press down. Sprinkle additional mini chocolate chips on top.
  8. Refrigerate for at least 3 hours, or until set. Lift out of the pan using the parchment paper overhang, cut into squares, and serve.
