Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour, heat-treated
- 1/4 teaspoon salt
- 1 cup mini chocolate chips
- 14 oz sweetened condensed milk
- 1/2 cup creamy peanut butter (optional)
- Additional mini chocolate chips for topping
Directions:
- Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, cream together the butter and brown sugar until smooth. Mix in the vanilla extract.
- Gradually add the flour and salt to the butter mixture, mixing until fully incorporated. Fold in 1 cup of mini chocolate chips.
- Press half of the cookie dough mixture into the bottom of the prepared pan.
- In a microwave-safe bowl, combine the sweetened condensed milk and peanut butter (if using). Microwave for 30 seconds, stir, and repeat until smooth.
- Pour the condensed milk mixture over the cookie dough layer in the pan, spreading evenly.
- Crumble the remaining cookie dough over the top, and gently press down. Sprinkle additional mini chocolate chips on top.
- Refrigerate for at least 3 hours, or until set. Lift out of the pan using the parchment paper overhang, cut into squares, and serve.
