Cotton Candy Cheesecake

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/2 teaspoon cotton candy flavoring (LorAnn or similar)
  • Pink and blue food coloring

For the Topping (Optional):

  • Whipped cream
  • Cotton candy pieces
  • Sprinkles

Directions:

  1. Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes. Set aside to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla, sour cream, heavy cream, and cotton candy flavoring until combined.
  5. Divide batter into two bowls. Tint one with pink food coloring and the other with blue.
  6. Pour spoonfuls of each color alternately into the pan to create a swirl pattern. Use a skewer or knife to swirl gently.
  7. Place the pan in a water bath and bake for 55–65 minutes, or until the center is almost set.
  8. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
  9. Remove and chill for at least 4 hours or overnight.
  10. Before serving, top with whipped cream, cotton candy, and sprinkles if desired.
