Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, baking powder, and salt; gradually stir into the creamed mixture.
  5. Mix in the oats, chocolate chips, pecans, coconut, and raisins.
  6. Drop by rounded spoonfuls onto ungreased cookie sheets.
  7. Bake for 10-12 minutes in the preheated oven, or until the edges are golden.
  8. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
