Ingredients:
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1/2 cup chopped pecans
- 1/2 cup shredded coconut
- 1/2 cup raisins
Directions:
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking soda, baking powder, and salt; gradually stir into the creamed mixture.
- Mix in the oats, chocolate chips, pecans, coconut, and raisins.
- Drop by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 10-12 minutes in the preheated oven, or until the edges are golden.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
