Ingredients:
- 1 1/2 lbs ground beef
 - 2 large potatoes, thinly sliced
 - 1 onion, finely chopped
 - 2 cloves garlic, minced
 - 1 egg
 - 1/2 cup breadcrumbs
 - 1/4 cup milk
 - 1/4 cup BBQ sauce
 - 1 tsp salt
 - 1/2 tsp black pepper
 - 2 cups shredded cheddar cheese
 - 1/2 cup sour cream
 - Fresh chives for garnish
 
Directions:
- Preheat the oven to 375°F (190°C).
 - In a bowl, mix together ground beef, onion, garlic, egg, breadcrumbs, milk, BBQ sauce, salt, and pepper.
 - Press the meat mixture into a baking dish.
 - Layer the thinly sliced potatoes on top of the meatloaf.
 - Cover with foil and bake for 45 minutes.
 - Remove foil, sprinkle cheese over the potatoes, and bake for an additional 15 minutes, or until cheese is melted and bubbly.
 - Let it rest for 5 minutes, then top with sour cream and garnish with chives.
