Ingredients:

  • 1 1/2 lbs ground beef
  • 2 large potatoes, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup BBQ sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh chives for garnish

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together ground beef, onion, garlic, egg, breadcrumbs, milk, BBQ sauce, salt, and pepper.
  3. Press the meat mixture into a baking dish.
  4. Layer the thinly sliced potatoes on top of the meatloaf.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil, sprinkle cheese over the potatoes, and bake for an additional 15 minutes, or until cheese is melted and bubbly.
  7. Let it rest for 5 minutes, then top with sour cream and garnish with chives.
