- Cowboy Meatloaf and Potato Casserole
Ingredients:
- For the Meatloaf:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1/4 cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- For the Potato Casserole:
- 4 cups mashed potatoes (prepared)
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits
- 2 tablespoons green onions, chopped
- Salt and pepper to taste
Directions:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the ground beef, breadcrumbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Mix until well combined. Shape the mixture into a loaf and place it in the prepared baking dish.
- Bake the meatloaf for 25-30 minutes or until it reaches an internal temperature of 160°F (71°C).
- While the meatloaf is baking, prepare the potato casserole. In a large bowl, mix the mashed potatoes with sour cream, shredded cheddar cheese, bacon bits, green onions, salt, and pepper.
- Remove the meatloaf from the oven and spread the potato mixture evenly over the top of the meatloaf.
- Return the dish to the oven and bake for an additional 10-15 minutes, or until the top is golden and the cheese is melted.
- Let cool for a few minutes before serving. Garnish with extra bacon bits or green onions if desired.
