Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 medium head of cabbage, chopped
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked rice
- 1 tablespoon brown sugar (optional, for sweetness)
Directions:
- In a large pot, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add the chopped onion and garlic to the pot and cook for 2-3 minutes until the onion is softened.
- Stir in the chopped cabbage and cook for an additional 5 minutes, stirring occasionally, until it begins to soften.
- Add the tomato sauce, diced tomatoes, beef broth, thyme, basil, salt, and pepper. Stir well to combine.
- Bring the soup to a simmer and cook for 25-30 minutes, or until the cabbage is tender and the flavors have melded together.
- Stir in the cooked rice and brown sugar (if using), and cook for an additional 5 minutes.
