This Cracker Barrel-style Meatloaf is the ultimate comfort food. Juicy ground beef mixed with seasonings, breadcrumbs, and a sweet tangy glaze, baked to perfection – it’s a meal that feels like a warm hug.

  1. Ingredients:
  • 500g ground beef
  • 1 small onion, finely chopped
  • 1/2 cup milk
  • 1 cup breadcrumbs
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil (for greasing)

For the Glaze:

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar

Directions:

  1. Preheat your oven to 180°C (350°F). Lightly grease a loaf pan with olive oil or line it with parchment paper.
  2. In a large bowl, combine the ground beef, finely chopped onion, milk, breadcrumbs, egg, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix thoroughly until all ingredients are well combined.
  3. Transfer the meat mixture into the prepared loaf pan and shape it into a loaf shape, pressing it down gently.
  4. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to create the glaze. Pour this glaze evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 55-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 70°C (160°F).
  6. Once cooked, remove from the oven and let it rest for 10 minutes before slicing and serving.
