This Cracker Barrel-style Meatloaf is the ultimate comfort food. Juicy ground beef mixed with seasonings, breadcrumbs, and a sweet tangy glaze, baked to perfection – it’s a meal that feels like a warm hug.
- Ingredients:
- 500g ground beef
- 1 small onion, finely chopped
- 1/2 cup milk
- 1 cup breadcrumbs
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon olive oil (for greasing)
For the Glaze:
- 1/4 cup ketchup
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar
Directions:
- Preheat your oven to 180°C (350°F). Lightly grease a loaf pan with olive oil or line it with parchment paper.
- In a large bowl, combine the ground beef, finely chopped onion, milk, breadcrumbs, egg, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix thoroughly until all ingredients are well combined.
- Transfer the meat mixture into the prepared loaf pan and shape it into a loaf shape, pressing it down gently.
- In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to create the glaze. Pour this glaze evenly over the top of the meatloaf.
- Bake in the preheated oven for 55-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 70°C (160°F).
- Once cooked, remove from the oven and let it rest for 10 minutes before slicing and serving.
