This Cranberry Orange Bread is a delightful combination of tart cranberries and the fresh, citrusy zing of orange, all topped with a sweet, simple glaze. The moist loaf is perfect for breakfast, tea time, or a festive treat during the holiday season.

  1. Ingredients:

For the Bread:

  • 250g all-purpose flour
  • 150g sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 120ml vegetable oil
  • 120ml fresh orange juice
  • Zest of 1 orange
  • 150g fresh cranberries, chopped

For the Glaze:

  • 100g powdered sugar
  • 1 tablespoon fresh orange juice
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 180°C (350°F). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs, then add the vegetable oil, orange juice, and orange zest. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped cranberries, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the centre comes out clean.
  7. While the bread is baking, prepare the glaze by whisking together the powdered sugar, orange juice, and vanilla extract in a small bowl.
  8. Once the bread is done, allow it to cool in the pan for 10 minutes before transferring it to a wire rack.
  9. Drizzle the glaze over the cooled bread, slice, and serve.
