This Cranberry Orange Bread is a delightful combination of tart cranberries and the fresh, citrusy zing of orange, all topped with a sweet, simple glaze. The moist loaf is perfect for breakfast, tea time, or a festive treat during the holiday season.
- Ingredients:
For the Bread:
- 250g all-purpose flour
- 150g sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 120ml vegetable oil
- 120ml fresh orange juice
- Zest of 1 orange
- 150g fresh cranberries, chopped
For the Glaze:
- 100g powdered sugar
- 1 tablespoon fresh orange juice
- 1/2 teaspoon vanilla extract
Directions:
- Preheat your oven to 180°C (350°F). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs, then add the vegetable oil, orange juice, and orange zest. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the chopped cranberries, being careful not to overmix.
- Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the centre comes out clean.
- While the bread is baking, prepare the glaze by whisking together the powdered sugar, orange juice, and vanilla extract in a small bowl.
- Once the bread is done, allow it to cool in the pan for 10 minutes before transferring it to a wire rack.
- Drizzle the glaze over the cooled bread, slice, and serve.
