Ingredients:
- 4 tablespoons unsalted butter (half a stick)
- Mirepoix mix (finely chopped onions, carrots, celery)
- 3 cups small red potatoes, scrubbed and cut into pieces
- 1/3 cup all-purpose flour
- 1 cup room-temperature chicken broth
- 2 cups cold milk
- 1/4 teaspoon salt (adjust to taste)
- Ground black pepper to taste
- 2 cups frozen peas
Directions:
- Melt the butter in a large pan over medium heat. Let it brown slightly to deepen the flavor.
- Add the Mirepoix mix to the pan and sauté until the onions are translucent and the mixture is aromatic.
- Add the red potato pieces to the pan, allowing them to brown slightly. Red potatoes are ideal here due to their firm texture.
- Once the potatoes are golden, remove them from the pan and set aside, keeping them slightly undercooked as they will continue cooking later.
- In the same pan, add a bit more butter and then the flour. Reduce the heat to low and cook the flour for about 30 seconds to eliminate the raw flavor.
- Gradually pour in the chicken broth, stirring continuously until the mixture is smooth and thick.
- Slowly incorporate the cold milk, adding it a third at a time to achieve a creamy consistency. You may need to adjust the heat to help with this process.
- Season the sauce with salt and black pepper to taste. Remember to taste as you go, as potatoes need sufficient seasoning.
- Return the browned potatoes to the pan, and add the frozen peas.
- Lower the heat and let the mixture simmer uncovered for about 20 minutes, allowing the sauce to thicken and the flavors to meld.
