This Italian Chicken Pasta brings together tender chicken, creamy Parmesan sauce, and perfectly cooked penne for a comforting dish that’s rich in flavor. The sun-dried tomatoes add a touch of sweetness that pairs beautifully with the savory garlic and basil. It’s the ultimate meal for any night you want something indulgent but still easy to prepare.
- Ingredients:
- 2 boneless, skinless chicken breasts
- 12 oz penne pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish (optional)
Directions:
- Cook the penne pasta according to package instructions, drain, and set aside.
- While the pasta cooks, season the chicken breasts with salt, pepper, basil, and oregano.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet, let rest for 5 minutes, then slice into strips.
- In the same skillet, add the minced garlic and cook for 1 minute, until fragrant.
- Pour in the chicken broth and bring to a simmer. Let it reduce for 3-4 minutes.
- Add the heavy cream and sun-dried tomatoes, stirring to combine. Bring to a gentle simmer and cook for an additional 2-3 minutes.
- Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet, tossing to coat in the creamy sauce.
- Top with the sliced chicken and garnish with fresh basil or parsley if desired. Serve hot and enjoy!
