Crock Pot Chicken and Dumplings is the ultimate comfort food, especially on a chilly evening.   1. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 medium carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of celery soup
  • 1 cup milk
  • 1/2 cup frozen peas
  • 1 1/2 cups biscuit mix (such as Bisquick)
  • 1/2 cup milk (for dumplings)
  • 1 tablespoon melted butter (for dumplings)

Directions:

  1. Place the chicken breasts, onion, celery, carrots, garlic, chicken broth, thyme, rosemary, salt, and pepper into the slow cooker. Stir to combine.
  2. Cover and cook on low for 6-7 hours or until the chicken is fully cooked and the vegetables are tender.
  3. Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back to the crock pot.
  4. In a separate bowl, whisk together the biscuit mix, 1/2 cup milk, and melted butter until a soft dough forms.
  5. Drop spoonfuls of the biscuit dough onto the surface of the soup in the crock pot, covering as much of the surface as possible.
  6. Cover the slow cooker and cook on high for an additional 30 minutes, or until the dumplings are cooked through and a toothpick inserted into the center comes out clean.
  7. Stir in the frozen peas and let them heat through for about 5 minutes.
  8. Serve hot and enjoy the creamy, comforting flavors of this classic dish!
