Crock Pot Chicken and Dumplings is the ultimate comfort food, especially on a chilly evening. The slow-cooked chicken becomes tender and juicy, blending perfectly with the creamy soup and tender vegetables. - Ingredients:
- 4 boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 celery stalks, chopped
- 2 medium carrots, peeled and chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of celery soup
- 1 cup milk
- 1/2 cup frozen peas
- 1 1/2 cups biscuit mix (such as Bisquick)
- 1/2 cup milk (for dumplings)
- 1 tablespoon melted butter (for dumplings)
Directions:
- Place the chicken breasts, onion, celery, carrots, garlic, chicken broth, thyme, rosemary, salt, and pepper into the slow cooker. Stir to combine.
- Cover and cook on low for 6-7 hours or until the chicken is fully cooked and the vegetables are tender.
- Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken back to the crock pot.
- In a separate bowl, whisk together the biscuit mix, 1/2 cup milk, and melted butter until a soft dough forms.
- Drop spoonfuls of the biscuit dough onto the surface of the soup in the crock pot, covering as much of the surface as possible.
- Cover the slow cooker and cook on high for an additional 30 minutes, or until the dumplings are cooked through and a toothpick inserted into the center comes out clean.
- Stir in the frozen peas and let them heat through for about 5 minutes.
