Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 large head iceberg lettuce, chopped
- 2 cups shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- 1 red onion, finely chopped
- 1 cup sweet corn
- 1 cup black beans, drained and rinsed
- 1 cup Catalina dressing
- 3 cups Doritos, crushed
- 1/2 cup sliced black olives
- 1/2 cup sour cream (for garnish)
- Fresh cilantro (for garnish)
Directions:
- Cook ground beef in a skillet over medium heat until browned. Drain excess grease and add taco seasoning according to the package instructions.
- In a large bowl, combine chopped lettuce, shredded cheese, cherry tomatoes, red onion, sweet corn, and black beans.
- Add the cooked beef to the salad mixture.
- Right before serving, toss the salad with Catalina dressing and crushed Doritos.
- Garnish with black olives, dollops of sour cream, and fresh cilantro.
