Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels, frozen or canned
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups shredded cheese, Mexican blend
  • 6 flour tortillas
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine shredded chicken, black beans, corn, salsa, sour cream, 1 cup of cheese, cumin, chili powder, salt, and pepper.
  3. Lay out the tortillas and distribute the filling evenly among them. Roll up the tortillas and place them seam-side down in a baking dish.
  4. Top with the remaining cheese.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Let cool for a few minutes before serving.
