Ingredients:
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn kernels, frozen or canned
- 1 cup salsa
- 1 cup sour cream
- 2 cups shredded cheese, Mexican blend
- 6 flour tortillas
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
Directions:
- Preheat oven to 375°F (190°C).
- In a bowl, combine shredded chicken, black beans, corn, salsa, sour cream, 1 cup of cheese, cumin, chili powder, salt, and pepper.
- Lay out the tortillas and distribute the filling evenly among them. Roll up the tortillas and place them seam-side down in a baking dish.
- Top with the remaining cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
