Ingredients:
- 12 oz linguine or spaghetti
- 1 lb large shrimp, peeled and deveined
- 4 tablespoons butter
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 ½ cups shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley
- Lemon wedges for serving (optional)
Directions:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat butter and olive oil over medium heat. Add garlic and red pepper flakes, cooking for 1 minute.
- Add shrimp and cook for 2–3 minutes per side, or until pink and opaque. Remove shrimp and set aside.
- Pour in wine (or chicken broth) and lemon juice. Simmer 2–3 minutes. Add salt and pepper.
- Add cooked pasta to the skillet and toss to coat in the scampi sauce.
- Transfer pasta to baking dish. Top with shrimp, then sprinkle evenly with Parmesan and mozzarella.
- Bake uncovered for 12–15 minutes, until cheese is melted and bubbly.
- Garnish with parsley and serve with lemon wedges if desired.
