Ingredients:

  • 12 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving (optional)

Directions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. In a large skillet, heat butter and olive oil over medium heat. Add garlic and red pepper flakes, cooking for 1 minute.
  4. Add shrimp and cook for 2–3 minutes per side, or until pink and opaque. Remove shrimp and set aside.
  5. Pour in wine (or chicken broth) and lemon juice. Simmer 2–3 minutes. Add salt and pepper.
  6. Add cooked pasta to the skillet and toss to coat in the scampi sauce.
  7. Transfer pasta to baking dish. Top with shrimp, then sprinkle evenly with Parmesan and mozzarella.
  8. Bake uncovered for 12–15 minutes, until cheese is melted and bubbly.
  9. Garnish with parsley and serve with lemon wedges if desired.
