- 1 lb breakfast sausage, cooked and crumbled
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1/2 teaspoon black pepper
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- In a large bowl, combine flour, baking powder, salt, and black pepper. Stir in the shredded cheddar cheese.
- In a separate bowl, whisk together milk, vegetable oil, and eggs until well combined.
- Add the cooked sausage to the dry ingredients, then pour in the wet ingredients. Mix until just combined; do not overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool slightly in the pan before transferring to a wire rack.
