This Easy Stuffed Pepper Casserole combines the best of stuffed peppers into a hassle-free, cheesy casserole. The tender bell peppers are packed with a flavorful mix of ground beef, rice, and savory seasonings, then topped with melted cheddar cheese for a satisfying, hearty dish. It’s like comfort food in a single pan, perfect for any night of the week.
- Ingredients:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes, drained
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large bell peppers, chopped
- 1/2 cup beef broth
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Directions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
- Add the chopped onion and minced garlic to the skillet and cook for another 3 minutes until softened.
- Stir in the diced tomatoes, cooked rice, oregano, basil, salt, and pepper. Let the mixture simmer for 5 minutes.
- Add the chopped bell peppers to the skillet and mix until everything is well combined.
- Pour the beef mixture into a 9×13-inch baking dish, spreading it out evenly.
- Pour the beef broth over the casserole. Cover the dish with aluminum foil and bake for 25 minutes.
- After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese over the casserole.
- Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley if desired, and serve hot.
