Ingredients:
- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes (optional)
- ½ cup white wine (or chicken broth)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
- Grated Parmesan cheese (for garnish)
Directions:
- Cook the linguine according to package instructions. Drain, reserving 1/2 cup of pasta water, and set aside.
- In a large skillet, heat the butter and olive oil over medium heat. Add the garlic and crushed red pepper flakes (if using) and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and are cooked through.
- Pour in the white wine (or chicken broth) and lemon juice. Let it simmer for 2-3 minutes, allowing the sauce to reduce slightly.
- Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.

- Serve the shrimp scampi immediately, topped with grated Parmesan cheese.
