Ingredients:

  • 4 large apples, peeled and diced
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 4-6 tablespoons cold water
  • Vegetable oil for frying
  • Powdered sugar for dusting

Directions:

  1. In a saucepan, combine diced apples, 1/2 cup sugar, cinnamon, and lemon juice. Cook over medium heat until apples are soft, about 10 minutes. Set aside to cool.
  2. In a mixing bowl, combine flour, 1/4 cup sugar, and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add water, stirring until a dough forms.
  3. Roll out the dough on a floured surface to 1/8 inch thickness. Cut into 5-inch squares.
  4. Place a spoonful of the apple mixture on each square. Fold the dough over the filling and seal the edges.
  5. Heat oil in a deep fryer or large skillet to 375°F (190°C). Fry pies until golden brown, about 3-4 minutes on each side. Drain on paper towels and dust with powdered sugar.
