Ingredients:
- 1½ pounds russet potatoes, diced into 1/2″ cubes
- 1 pound smoked sausage, sliced
- 2 tablespoons olive oil
- ½ teaspoon seasoned salt
- ½ teaspoon Italian seasoning
- ½ large red bell pepper, chopped
- ½ large green bell pepper, chopped
- 1 small onion, diced
- Black pepper, to taste
- Shredded parmesan cheese, for garnish
Directions:
- In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat until the butter is melted.
- Add the diced onions to the skillet and sauté until they are translucent and soft, about 5 minutes. Remove the onions from the skillet and set aside.
- Add the potatoes to the skillet along with the seasoned salt, Italian seasoning, and a dash of black pepper. Cook, covered, over medium heat, stirring occasionally, for about 15 minutes, or until the potatoes are tender.
- While the potatoes are cooking, in a separate pan, cook the smoked sausage over medium-high heat until it is crisp and browned, about 5-7 minutes.
- Add the cooked sausage to the skillet with the potatoes. Stir to combine.
- Add the chopped bell peppers to the skillet and sauté for an additional 10 minutes, or until the peppers are soft yet still slightly crisp.
- Return the sautéed onions to the skillet and mix everything together.
- If desired, sprinkle shredded parmesan cheese over the top before serving.
