Ingredients:

  • 1½ pounds russet potatoes, diced into 1/2″ cubes
  • 1 pound smoked sausage, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt
  • ½ teaspoon Italian seasoning
  • ½ large red bell pepper, chopped
  • ½ large green bell pepper, chopped
  • 1 small onion, diced
  • Black pepper, to taste
  • Shredded parmesan cheese, for garnish

Directions:

  1. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat until the butter is melted.
  2. Add the diced onions to the skillet and sauté until they are translucent and soft, about 5 minutes. Remove the onions from the skillet and set aside.
  3. Add the potatoes to the skillet along with the seasoned salt, Italian seasoning, and a dash of black pepper. Cook, covered, over medium heat, stirring occasionally, for about 15 minutes, or until the potatoes are tender.
  4. While the potatoes are cooking, in a separate pan, cook the smoked sausage over medium-high heat until it is crisp and browned, about 5-7 minutes.
  5. Add the cooked sausage to the skillet with the potatoes. Stir to combine.
  6. Add the chopped bell peppers to the skillet and sauté for an additional 10 minutes, or until the peppers are soft yet still slightly crisp.
  7. Return the sautéed onions to the skillet and mix everything together.
  8. If desired, sprinkle shredded parmesan cheese over the top before serving.
