Ingredients:

  • 8 slices thick-cut bread (Italian or sourdough works best)
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ teaspoon garlic powder
  • Optional: pinch of red pepper flakes for heat

Directions:

  1. In a small bowl, mix softened butter with minced garlic, parsley, and garlic powder until well combined.
  2. Spread the garlic butter mixture generously on one side of each bread slice.
  3. Heat a large non-stick skillet or griddle over medium heat.
  4. Place 4 slices of bread, buttered side down, on the skillet.
  5. Sprinkle a mix of mozzarella and cheddar evenly on each slice. Add red pepper flakes if using.
  6. Top with the remaining 4 slices of bread, buttered side up.
  7. Grill for 3–4 minutes per side or until golden brown and crispy, and the cheese is melted.
  8. Slice and serve hot, optionally with tomato soup or marinara dipping sauce.
