Garlic Butter Bacon Rollups are the perfect mashup of garlic bread and bacon grilled cheese — rolled, baked, and packed with flavor. They’re buttery, cheesy, garlicky, and satisfyingly crisp on every edge.

Great for parties, game day, or even just a fun family snack, these rollups are simple to make and always a hit. Serve them with dipping sauces like ranch or marinara for that extra touch of indulgence. One batch won’t be enough — guaranteed!

Ingredients:

  • 8 slices white or sandwich bread (crusts removed)
  • 8 slices cooked bacon
  • 8 slices mozzarella or cheddar cheese
  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Optional: pinch of red pepper flakes

Directions:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix melted butter, minced garlic, parsley, and red pepper flakes if using.
  3. Use a rolling pin to flatten each slice of bread.
  4. Place 1 slice of cheese and 1 bacon strip on each flattened bread slice. Roll tightly from one end to the other.
  5. Brush the outside of each rollup generously with the garlic butter mixture.
  6. Arrange rollups seam-side down on the baking sheet.
  7. Bake for 15–18 minutes or until golden brown and crispy, turning once for even browning.
  8. Serve warm with ranch, marinara, or garlic dip.
