  1. Greek Chicken Gyro

Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 large pita breads
  • 1/2 cup sliced red onion
  • 1 cup diced cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce (store-bought or homemade)

Directions:

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes or up to 4 hours in the fridge.
  2. Preheat a grill or grill pan over medium heat. Grill the chicken thighs for 5-6 minutes on each side until cooked through and slightly charred. Remove from the grill and let the chicken rest for a few minutes before slicing into strips.
  3. Warm the pita breads on the grill or in a skillet.
  4. To assemble, place a generous amount of chicken in each pita, then top with sliced red onion, diced cucumber, chopped tomatoes, crumbled feta, and a spoonful of tzatziki sauce.
  5. Roll up the pita to enclose the fillings, and serve warm.
