- Greek Chicken Gyro
Ingredients:
- 1 lb boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 large pita breads
- 1/2 cup sliced red onion
- 1 cup diced cucumber
- 1 cup chopped tomatoes
- 1/2 cup crumbled feta cheese
- 1 cup tzatziki sauce (store-bought or homemade)
Directions:
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes or up to 4 hours in the fridge.
- Preheat a grill or grill pan over medium heat. Grill the chicken thighs for 5-6 minutes on each side until cooked through and slightly charred. Remove from the grill and let the chicken rest for a few minutes before slicing into strips.
- Warm the pita breads on the grill or in a skillet.
- To assemble, place a generous amount of chicken in each pita, then top with sliced red onion, diced cucumber, chopped tomatoes, crumbled feta, and a spoonful of tzatziki sauce.
- Roll up the pita to enclose the fillings, and serve warm.
