- Hawaiian Pineapple Coconut Fluff
Ingredients:
- 1 can (20 oz) crushed pineapple, drained
- 1 cup sweetened shredded coconut
- 1 cup mini marshmallows
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup chopped pecans or walnuts (optional)
Directions:
- In a large mixing bowl, combine the drained crushed pineapple, shredded coconut, and mini marshmallows. Mix well until combined.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the pineapple mixture until fully incorporated.
- If desired, fold in chopped pecans or walnuts for added texture and flavor.
- Transfer the mixture to a serving bowl or individual cups and chill in the refrigerator for at least 2 hours before serving.
- Serve chilled, garnished with additional shredded coconut or nuts if desired.
