This dish is a delightful amalgamation of tender chicken breasts marinated in a unique blend of soy sauce, brown sugar, garlic, and ginger, all brightened with a hint of pineapple juice. Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup soy sauce
- 1/2 cup brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 cup pineapple juice
- 1 tbsp cornstarch
- 1 tbsp water
- 1/2 cup chopped green onions
- 1/2 cup canned pineapple chunks (optional)
Directions:
- In a bowl, combine soy sauce, brown sugar, garlic, ginger, and pineapple juice to create the teriyaki marinade.
- Marinate chicken breasts in this mixture and refrigerate for at least 1 hour or overnight.
- Preheat grill or skillet over medium heat.
- Remove chicken from marinade, reserving the liquid.
- Grill chicken 5-7 minutes per side or until fully cooked.
- Simultaneously, boil the reserved marinade in a saucepan.
- Mix cornstarch with water and add to the boiling marinade to thicken.
- Slice cooked chicken and serve with thickened teriyaki sauce, garnished with green onions and optional pineapple chunks.
