Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies (Rotel)
  • 1 can tomato sauce
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 2 cups water or beef broth
  • Salt and pepper to taste

Directions:

  1. Cook the Ground Beef: In a large pot, brown the ground beef over medium heat until fully cooked. Break the beef into small crumbles as it cooks. Drain any excess fat.
  2. Sauté the Onion: Add the chopped onion to the pot with the cooked ground beef. Sauté until the onion becomes translucent and tender, about 5 minutes.
  3. Add the Seasonings: Sprinkle the taco seasoning and ranch dressing mix over the beef and onion mixture. Stir well to ensure that the seasonings coat the meat evenly.
  4. Combine the Ingredients: Pour in the drained kidney beans, black beans, corn, diced tomatoes with green chilies, tomato sauce, and water or beef broth. Stir the mixture until all the ingredients are well combined.
  5. Simmer the Soup: Bring the soup to a boil, then reduce the heat to low. Let the soup simmer for about 30 minutes, stirring occasionally. This allows the flavors to meld together.
