Ingredients:

  • 3 tablespoons milk
  • 3 tablespoons boiling water
  • 1 teaspoon dry active yeast
  • 8 ounces all-purpose flour (a little under 2 cups; weigh for accuracy)
  • 1 1/2 ounces sugar (about 3 tablespoons)
  • 1 egg
  • 1 ounce butter (cold to room temperature)
  • A dash of salt
  • Oil for frying
Glaze:
  • 1/3 cup butter
  • 2 cups confectioners’ sugar
  • 1 1/2 teaspoons vanilla
  • 4 tablespoons hot water (or as needed)
Directions:
  1. Combine milk and boiling water in a jug. Add a teaspoon of sugar and the yeast. Stir gently and leave in a warm place to activate (foam).
  2. In a mixing bowl, mix flour, remaining sugar, and salt. Cut in the butter until it resembles crumbs.
  3. Add beaten egg and yeast mixture to flour. Mix into a smooth dough (about 5 minutes).
  4. Knead the dough on a floured surface for 5-10 minutes. Place it back in the bowl, cover, and let it rise until doubled (about 1 hour).
  5. Cut risen dough into 4 pieces. Stretch each into a long rope, cut into inch-long strips, and form into balls. Place on a tray and cover.
  6. Heat oil to 375°F. Fry doughnuts until golden (about 2 minutes per side), in batches.
  7. Drain and glaze while warm.
