Ingredients:
- 1/2 cup unsalted butter, softened
- 2 cups granulated sugar
- 5 large eggs, separated
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Directions:
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together 1/2 cup butter and granulated sugar until light and fluffy.
- Beat in egg yolks one at a time.
- In another bowl, whisk together flour and baking soda, and gradually add to the creamed mixture alternately with buttermilk, beating well after each addition. Stir in 1 teaspoon vanilla, coconut, and pecans.
- In a separate bowl, beat egg whites until stiff peaks form and fold into batter.
- Pour into three greased and floured 9-inch cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans and cool completely.
- For frosting, beat cream cheese and 1/2 cup butter until smooth. Gradually beat in powdered sugar and 1 teaspoon vanilla until smooth.
- Spread frosting between layers and over the top and sides of cake.
