Ingredients:

  • 1 box chocolate cake mix
  • 3 eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 2 lbs ricotta cheese
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 4 cups mascarpone cheese
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/2 cup mini chocolate chips

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine chocolate cake mix, eggs, water, and oil. Mix until smooth and pour into the prepared baking pan.
  3. In another bowl, mix ricotta cheese with sugar and 1 tsp vanilla extract. Spoon this mixture over the cake batter in the pan.
  4. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  5. For the frosting, blend mascarpone cheese with powdered sugar and 1 tsp vanilla extract until smooth. Spread over the cooled cake.
  6. Sprinkle mini chocolate chips over the top. Refrigerate for at least one hour before serving.
