  1. Jalapeno Peach Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh peaches, diced (or canned, drained)
  • 2 jalapeños, seeded and finely chopped
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:

  1. Preheat your grill or oven to 375°F (190°C).
  2. In a medium bowl, combine the diced peaches, chopped jalapeños, honey, soy sauce, minced garlic, ground cumin, salt, and pepper. Mix well to create the peach glaze.
  3. Rub the chicken breasts with olive oil and season with salt and pepper.
  4. Place the chicken on the grill or in a baking dish and brush generously with the peach glaze. Reserve some glaze for basting.
  5. Grill the chicken for 6-7 minutes per side, basting with the reserved glaze, until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  6. If baking, place the chicken in the oven and bake for 25-30 minutes, basting occasionally with the glaze.
  7. Once cooked, remove from heat and let rest for 5 minutes. Garnish with fresh cilantro before serving.
