- Jalapeno Peach Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh peaches, diced (or canned, drained)
- 2 jalapeños, seeded and finely chopped
- 1/4 cup honey
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Directions:
- Preheat your grill or oven to 375°F (190°C).
- In a medium bowl, combine the diced peaches, chopped jalapeños, honey, soy sauce, minced garlic, ground cumin, salt, and pepper. Mix well to create the peach glaze.
- Rub the chicken breasts with olive oil and season with salt and pepper.
- Place the chicken on the grill or in a baking dish and brush generously with the peach glaze. Reserve some glaze for basting.
- Grill the chicken for 6-7 minutes per side, basting with the reserved glaze, until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
- If baking, place the chicken in the oven and bake for 25-30 minutes, basting occasionally with the glaze.
- Once cooked, remove from heat and let rest for 5 minutes. Garnish with fresh cilantro before serving.
