This John Wayne Casserole is the perfect comfort meal that combines the rich flavours of seasoned beef, sweetcorn, and pinto beans, all smothered with melted cheese and topped with crunchy tortilla chips. It’s a satisfying, cheesy delight that will leave everyone at the table reaching for seconds.
- Ingredients:
- 500g ground beef
- 1 medium onion, chopped
- 1 can (400g) diced tomatoes
- 1 can (400g) pinto beans, drained and rinsed
- 1 can (300g) sweetcorn, drained
- 1 packet taco seasoning mix
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup tortilla chips, crushed
- 1/4 cup fresh coriander, chopped (optional)
- Salt and pepper, to taste
Directions:
- Preheat your oven to 180°C (160°C fan) or 350°F. Grease a 9×13 inch baking dish.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat, then add the chopped onion and cook for an additional 3-4 minutes until the onion softens.
- Stir in the taco seasoning mix, followed by the diced tomatoes, pinto beans, and sweetcorn. Cook for 5-7 minutes, stirring occasionally, until heated through and well combined. Season with salt and pepper to taste.
- Spread the beef mixture evenly in the prepared baking dish.
- Dollop the sour cream on top of the beef mixture and spread it out evenly.
- Sprinkle the crushed tortilla chips over the top, followed by the shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh coriander, if desired.
