This Oatmeal Spice Cake is a delightful treat, combining the warmth of cinnamon and nutmeg with the wholesome goodness of oats. It’s a perfect blend of homestyle comfort and sweet indulgence, with a soft, moist texture that melts in your mouth.

Ingredients:

  • 1 ½ cups boiling water
  • 1 cup rolled oats
  • ½ cup butter, softened
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
For the Frosting:
  • ½ cup butter
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
Directions:
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, pour boiling water over the oats and set aside for 20 minutes.
  3. In a large bowl, cream together the ½ cup butter with white and brown sugars. Beat in the eggs one at a time, then stir in vanilla.
  4. Combine flour, baking soda, cinnamon, nutmeg, and salt; stir into the creamed mixture. Mix in the soaked oats. Pour into the prepared pan.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Cool the cake completely.
  6. For the frosting, melt ½ cup butter in a saucepan over medium heat; stir in brown sugar and heavy cream. Bring to a boil and cook for 1 minute. Remove from heat and beat in powdered sugar and vanilla until smooth. Spread over cooled cake.
