This Oatmeal Spice Cake is a delightful treat, combining the warmth of cinnamon and nutmeg with the wholesome goodness of oats. It’s a perfect blend of homestyle comfort and sweet indulgence, with a soft, moist texture that melts in your mouth.
Ingredients:
- 1 ½ cups boiling water
- 1 cup rolled oats
- ½ cup butter, softened
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup butter
- ½ cup brown sugar
- ¼ cup heavy cream
- 1 cup powdered sugar
- ½ teaspoon vanilla extract
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, pour boiling water over the oats and set aside for 20 minutes.
- In a large bowl, cream together the ½ cup butter with white and brown sugars. Beat in the eggs one at a time, then stir in vanilla.
- Combine flour, baking soda, cinnamon, nutmeg, and salt; stir into the creamed mixture. Mix in the soaked oats. Pour into the prepared pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Cool the cake completely.
- For the frosting, melt ½ cup butter in a saucepan over medium heat; stir in brown sugar and heavy cream. Bring to a boil and cook for 1 minute. Remove from heat and beat in powdered sugar and vanilla until smooth. Spread over cooled cake.
