Ingredients:

  • 2 large chicken breasts, diced
  • 4 large potatoes, cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon bits
  • 1/2 cup green onions, chopped
  • 1 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
Directions:
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together the cubed potatoes, salt, and pepper. Spread evenly in a greased baking dish.
  3. Bake potatoes for 20 minutes.
  4. In a skillet, cook the chicken until golden brown and set aside.
  5. In a bowl, combine sour cream, milk, half of the cheese, and half of the green onions.
  6. Remove potatoes from the oven, layer the cooked chicken on top, and pour the sour cream mixture over it.
  7. Sprinkle with the remaining cheese and bacon bits.
  8. Bake for an additional 20-25 minutes or until the cheese is bubbly and golden.
  9. Garnish with the remaining green onions before serving.
