Ingredients:
- 2 large chicken breasts, diced
- 4 large potatoes, cubed
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits
- 1/2 cup green onions, chopped
- 1 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together the cubed potatoes, salt, and pepper. Spread evenly in a greased baking dish.
- Bake potatoes for 20 minutes.
- In a skillet, cook the chicken until golden brown and set aside.
- In a bowl, combine sour cream, milk, half of the cheese, and half of the green onions.
- Remove potatoes from the oven, layer the cooked chicken on top, and pour the sour cream mixture over it.
- Sprinkle with the remaining cheese and bacon bits.
