Ingredients:
- 4 large Russet potatoes, cleaned
- ½ pound shrimp, cleaned and deveined, tails on
- ½ cup crawfish tail meat
- 2 tbsp cooking oil
- 2 tbsp butter
- Olive oil
- Cajun Seasoning to taste
- Sherry Cream sauce
- 8 ounces Italian cheese blend
- 2 cloves garlic, minced
- 2 medium shallots, diced
- ¼ cup Brandy, flambeed
- 2 cups Sherry Wine
- 1 cup shrimp stock
- ¼ cup crawfish juice
- 1 cup heavy whipping cream
- ½ cup crawfish tail meat
- ½ cup diced green onions
- Preheat oven to 400°F.
- Wash and coat potatoes with olive oil and salt, wrap in foil, and bake until tender.
- Sauté garlic and shallots in butter, add shrimp, season with Cajun seasoning, and cook.
- Flambee with Brandy, add wine, crawfish juice, and shrimp stock, reduce by half, and stir in cream.
- Spoon shrimp sauce over baked potatoes, top with cheese, and bake until cheese melts.
- Garnish with green onions.
