Ingredients:

  • 4 large Russet potatoes, cleaned
  • ½ pound shrimp, cleaned and deveined, tails on
  • ½ cup crawfish tail meat
  • 2 tbsp cooking oil
  • 2 tbsp butter
  • Olive oil
  • Cajun Seasoning to taste
  • Sherry Cream sauce
  • 8 ounces Italian cheese blend
  • 2 cloves garlic, minced
  • 2 medium shallots, diced
  • ¼ cup Brandy, flambeed
  • 2 cups Sherry Wine
  • 1 cup shrimp stock
  • ¼ cup crawfish juice
  • 1 cup heavy whipping cream
  • ½ cup crawfish tail meat
  • ½ cup diced green onions
Directions:
  • Preheat oven to 400°F.
  • Wash and coat potatoes with olive oil and salt, wrap in foil, and bake until tender.
  • Sauté garlic and shallots in butter, add shrimp, season with Cajun seasoning, and cook.
  • Flambee with Brandy, add wine, crawfish juice, and shrimp stock, reduce by half, and stir in cream.
  • Spoon shrimp sauce over baked potatoes, top with cheese, and bake until cheese melts.
  • Garnish with green onions.
