These Loaded Steak Quesadillas are the perfect combination of tender steak, melted cheese, and sautéed peppers and onions. With every bite, you get a satisfying blend of savoury flavours wrapped in a crispy, golden tortilla.

- Ingredients:
- 500g sirloin steak, thinly sliced
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup grated cheddar cheese
- 1 cup grated mozzarella cheese
- 4 large flour tortillas
- 1 tablespoon soy sauce
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Sour cream and salsa for serving (optional)
Directions:
- Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced steak and cook for 4-5 minutes until browned, seasoning with salt, pepper, cumin, and paprika. Once cooked, remove the steak and set aside.
- In the same skillet, add the onions and bell peppers, cooking for 4-5 minutes until softened and slightly caramelised.
- Add the soy sauce to the veggies and stir, scraping any browned bits from the skillet. Remove from heat.
- Heat a separate non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle a generous amount of cheddar and mozzarella cheese on one half. Top with the cooked steak and vegetable mixture.
- Fold the tortilla in half, pressing down gently, and cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.
- Repeat with the remaining tortillas, adding cheese, steak, and veggies, and cooking until golden.
- Serve the quesadillas with sour cream and salsa on the side.
