These Loaded Steak Quesadillas are the perfect combination of tender steak, melted cheese, and sautéed peppers and onions. With every bite, you get a satisfying blend of savoury flavours wrapped in a crispy, golden tortilla.

  1. Ingredients:
  • 500g sirloin steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup grated cheddar cheese
  • 1 cup grated mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon soy sauce
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Directions:

  1. Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced steak and cook for 4-5 minutes until browned, seasoning with salt, pepper, cumin, and paprika. Once cooked, remove the steak and set aside.
  2. In the same skillet, add the onions and bell peppers, cooking for 4-5 minutes until softened and slightly caramelised.
  3. Add the soy sauce to the veggies and stir, scraping any browned bits from the skillet. Remove from heat.
  4. Heat a separate non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle a generous amount of cheddar and mozzarella cheese on one half. Top with the cooked steak and vegetable mixture.
  5. Fold the tortilla in half, pressing down gently, and cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.
  6. Repeat with the remaining tortillas, adding cheese, steak, and veggies, and cooking until golden.
  7. Serve the quesadillas with sour cream and salsa on the side.
