This batter recipe creates a light and crispy coating that’s perfect for deep-fried fish or seafood. The use of cornstarch and baking powder gives the batter its signature crunch, while the sparkling water or beer adds lightness and a subtle richness.

  1. Ingredients:
    • 1 cup all-purpose flour
    • 1/2 cup cornstarch
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon sugar
    • 1/4 teaspoon garlic powder (optional)
    • 1/4 teaspoon onion powder (optional)
    • 1 cup cold sparkling water (or cold beer for a richer batter)
    • 1 tablespoon vegetable oil
    • Oil for frying (vegetable or canola)

Directions:

  1. In a large bowl, whisk together the flour, cornstarch, baking powder, salt, sugar, garlic powder, and onion powder (if using).
  2. Gradually add the cold sparkling water (or beer) and vegetable oil to the dry ingredients, stirring gently until the batter is smooth and thickened. Be careful not to over-mix.
  3. Heat oil in a deep fryer or large saucepan to 180°C (350°F). You need enough oil to submerge the fish or other items you plan to fry.
  4. Dip your fish fillets, shrimp, or vegetables into the batter, making sure they are fully coated.
  5. Carefully lower the battered items into the hot oil, cooking in batches if necessary. Fry for 3-5 minutes, or until golden and crispy.
  6. Remove from the oil and drain on a plate lined with paper towels. Serve immediately with your favourite dipping sauce.
