  1. Ingredients:

For the Meatballs:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste

For the Soup:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, peeled and diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup small pasta (like orzo or elbow macaroni)
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Roll the meat mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake the meatballs for 15-20 minutes, or until they are browned and cooked through. Set aside.
  5. While the meatballs are baking, heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes until softened.
  6. Add the diced carrots and celery to the pot, cooking for an additional 3-4 minutes, until they begin to soften.
  7. Stir in the diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  8. Once the soup is simmering, carefully add the meatballs to the pot. Allow the soup to simmer for another 10-15 minutes, allowing the flavors to meld.
  9. Add the pasta and cook according to package instructions until tender, about 8-10 minutes.
  10. Taste the soup and adjust seasoning as necessary. Remove from heat and garnish with fresh parsley before serving.
