Magnificent Meatball Soup is the ultimate comfort food. With tender, flavorful meatballs, hearty vegetables, and a rich broth, this soup is the perfect meal for a chilly evening. - Ingredients:
For the Meatballs:
- 1 lb ground beef (or a mix of beef and pork)
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper, to taste
For the Soup:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, peeled and diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 6 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper, to taste
- 1 cup small pasta (like orzo or elbow macaroni)
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Roll the meat mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake the meatballs for 15-20 minutes, or until they are browned and cooked through. Set aside.
- While the meatballs are baking, heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes until softened.
- Add the diced carrots and celery to the pot, cooking for an additional 3-4 minutes, until they begin to soften.
- Stir in the diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring the mixture to a simmer.
- Once the soup is simmering, carefully add the meatballs to the pot. Allow the soup to simmer for another 10-15 minutes, allowing the flavors to meld.
- Add the pasta and cook according to package instructions until tender, about 8-10 minutes.
- Taste the soup and adjust seasoning as necessary. Remove from heat and garnish with fresh parsley before serving.
