Ingredients:
- 3 cups mashed potatoes (about 3 large potatoes)
- 2 eggs
- 1 cup shredded cheddar cheese (or cheese of choice)
- 4 tablespoons chopped cooked bacon (can substitute ham or omit)
- 2 tablespoons chopped chives (or green onions)
- 2 tablespoons grated Parmesan cheese
- Salt and ground black pepper, to taste
- Sour cream, for serving (optional)
- Additional chopped chives, for garnish (optional)
Instructions:
- Prepare the Mixture:
- In a large bowl, combine the mashed potatoes, eggs, shredded cheddar cheese, chopped cooked bacon, chives, and grated Parmesan.
- Season the mixture with salt and ground black pepper to taste. Mix well until all ingredients are fully incorporated.
- Prepare the Muffin Tin:
- Preheat your oven to 400°F (200°C).
- Grease a 12-cup muffin tin with baking spray to prevent sticking.
- Fill the Muffin Cups:
- Using a large ice cream scoop, evenly divide the potato mixture into the muffin cups, filling each about 3/4 full.
- Smooth the tops with the back of a spoon to create an even surface.
- Bake:
- Place the muffin tin in the preheated oven and bake for 25-35 minutes, or until the tops of the potato pops are lightly browned.
- Check for doneness at 25 minutes and continue baking if necessary until the tops are nicely browned.
- Cool and Serve:
- Once baked, remove the muffin tin from the oven and let it cool for 5-10 minutes.
- Run a knife around the edges of each muffin cup to loosen the potato pops.
- Gently remove the potato pops from the tin and transfer them to a serving plate or platter.
- Garnish and Enjoy:
- Serve the potato pops warm, with sour cream and extra chopped chives for topping, if desired.
