This Mediterranean Pasta Salad is a vibrant and refreshing dish that perfectly combines the flavours of the Mediterranean. The crunchy cucumber, juicy tomatoes, and briny olives complement the creamy feta cheese and tender pasta, while the tangy dressing brings everything together.

  1. Ingredients:
    • 300g pasta (penne or fusilli)
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1/2 red onion, thinly sliced
    • 1/2 cup black olives, pitted and halved
    • 1/2 cup feta cheese, crumbled
    • 1/4 cup extra virgin olive oil
    • 2 tablespoons red wine vinegar
    • 1 teaspoon dried oregano
    • Salt and pepper to taste
    • Fresh basil or parsley, chopped (optional, for garnish)

Directions:

  1. Cook the pasta according to the package instructions. Drain and set aside to cool.
  2. While the pasta is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and slice the red onion thinly.
  3. In a large mixing bowl, combine the cooked pasta, tomatoes, cucumber, red onion, olives, and crumbled feta cheese.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until the dressing is well combined.
  5. Pour the dressing over the pasta mixture and toss gently until everything is well coated.
  6. Garnish with fresh basil or parsley, if desired, and serve immediately or refrigerate for 30 minutes to allow the flavours to meld.
